Corn Picking

On July 20th I picked two totes full of corn from a friend's family farm which became one tote of shucked corn, then I spent the next day cleaning and cutting the kernels off the cobs and ended up with 8 gallons of corn. Mmmm. Looks like we'll be having fried corn all winter.

I had never heard of fried corn before moving to Kentucky but it is delicious. Corn slow cooked in butter... What's not to like?

The garden is kind of crazy right now. Overgrown with weeds. And the big trellis fell over, it was leaning badly after the big storm that flooded us out, my husband tried to shore it up but a couple storms later it's now trashed.

The house remodel is moving along though, and soon I'll be sharing pictures of the finished bathroom.

That is a lot of corn to process. I grow it in my own garden, so I pick what is ready for the day and cook it up. Whatever we don't eat gets frozen. So I'm never inundated with corn. Though the reality is that it is probably less work overall to do it all at once.

Beautiful corn. Cutting off the cob is a great idea that will reduce the volume a lot. Do you freeze any of it?

Yum - sounds delicious. I had never heard of fried corn either - I must give that a try. Unfortunately, it won't be with my own corn this year - hopefully next year I can keep my corn safe from intruders.

Hi Daphne,
It took a few hours to cut the corn off the cob, especially since the knife I used was a little dull. But at least we shucked the corn the day before so it didn't take forever.

Hi David,
I went ahead and froze all the corn in gallon freezer bags. I don't no if people normally blanch corn before they freeze it, but we don't. I have a friend who freezes some of his ears of corn, but he wraps them in plastic as well as aluminum to keep them from getting freezer burn.

Hi Margaret,
Fried corn is pretty wonderful, it's pretty much all we cook when we have frozen corn for the winter.

I can't believe the critter problems you've been having, especially since they were tearing down your big corn stalks that didn't even have any ears formed on them. So strange and awful.

Hi Texan,
The cutup frozen corn has been wonderful and so easy to add to dishes. You've been doing a lot of work around the orchard and garden yourself. Thank goodness the cooler weather has set in.
